The estate extends over approximately 98 hectares of vineyards, in the process of being converted to organic farming, and is located in various appellations of Beaune and Chalon. The Chardonnay grapes come from a single monopole vineyard located at about 350 meters, in the municipality of St Aubin on stony limestone soil.
Here the vines, about 30 years old, enjoy a south-south-west exposure. The vinification takes place in barrels and the finished wine rests for 12 months in barrels (15% new). The Clos de la Chaise Dieu Monopole is a Chardonnay with a bright appearance and golden yellow tones.
On the nose, it reveals a fragrant bouquet of white flowers, ripe fruit (apple, pear, and citrus), and some light herbaceous tones. On the palate, it is lively and has a good consistency. The finish is persistent and recalls mineral notes.
It is excellent as an aperitif and pairs beautifully with seafood.
