In 1903, the winery was purchased by Albert Bichot winery, a prominent producer in the region. The Bichot family invested heavily in the winery, expanding its vineyards and turning it into the Burgundian powerhouse that it is today. Among this winery’s stunning range of single-vineyard Chardonnay wines, you can discover "La Justice", a beautiful Pinot Noir from the Gevrey-Chambertin appellation. The sub-region is notable for its characterful reds, which bring more flavour, colour and punchiness than many of the other elegant wines you’ll find across Burgundy. "La Justice" is a perfect wine to get acquainted with this unique appellation. The wine introduces itself with a deep scarlet colour and a fruit-dominated bouquet, particularly redolent of dark stone fruits such as plum and cherry. It feels full-bodied in the mouth, with wonderfully balanced red fruit flavours and an excellent structure that would benefit from some bottle ageing. The finish is long and satisfying, revealing hints of minerality. Consider pairing this with some classic Burgundian meals, such as beef bourguignon, Aubrac beef tenderloin, or refined cheeses.
